Bran muffins:
Yes, they are vegan and bran, but they met the Tuba City office's approval when I brought them in a few weeks ago. Quick to make, and keep in the fridge for up to a week.
Ingredients:
2 tablespoons margarine
2 cups apple sauce, sweetened or unsweetened
1 cup unbleached plain flour
1 1/2 cups unprocessed wheat bran flakes or oat bran
1/2 cup raw sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon vanilla
1 cup chopped nuts (optional)
1 cup raisins (optional)
METHOD
Preheat oven to 180C/350F.
In a large saucepan, heat the margarine and applesauce together over medium heat until the magarine is just melted, then remove from heat. Add the remaining ingredients, stir quickly to moisten, then pour the batter into a greased muffin pan. Bake for 20-25 minutes.
